Best wire strippers for signal wires
26-16 AWG wire strippers, I like these because they cover the range of wire gauges I use daily for wiring control circuitry. All the other wire strippers I have used only go down to 22 gauge, or up to 22 gauge with nothing in between.
Self Adjusting wire strippers
IRWIN VISE-GRIP Wire Stripper, Self-Adjusting, 8-Inch (2078300)
Works pretty well, even on zip cord (bonded multiconductor cable) so you can strip multiple wires at once. Has a depth stop which is very useful, until you drop them and it snaps off. Don't ask me how I know.

Cable Stripper
Jonard Tools CST-1900 Round Cable Stripper
Don't know how I lived without this. Its for stripping jackets off of cables. This cable stripper is amazing and you can replace the blades.
